A Mere Raw-kin’ Apple Pie
Tomorrow Akshara and I will be facing one of the challenges of being raw foodists… the 4th of July. While others are celebrating with barbecues, corn on the cob and potato chips, we will be preparing a fresh salad and our daily smoothies. Yet, I couldn’t let the holiday pass us by without a bit of our own celebration! So I headed to the health food store this morning to gather the ingredients to make a Raw Strawberry Apple Pie.
The recipe is:
1.25 to 1.5 cup pitted medjool dates
6 red apples, peeled, cored & chopped
1/2 cup strawberries, thinly sliced
3 cups walnuts
2 tsp cinnamon
1/4 tsp sea salt
Equipment you will need:
Food Processor
Pie Plate
Mixing Bowl
Measuring Cups & Spoons
Cutting Board
Knife
combine:
3/4 to 1 cup pitted dates
3 cups walnuts
process in FP until small, crumbly and sticky (add more dates if it isn’t sticky)
press most of it evenly into the bottom and sides of a pie plate as the crust
reserve a little for the topping
cut the strawberries thinly and layer them evenly on the crust
combine:
2 apples
1/4 to 1/2 cup of dates
2 tsp cinnamon
1/4 tsp sea salt
2 apples
1/4 to 1/2 cup of dates
2 tsp cinnamon
1/4 tsp sea salt
process in FP to make sauce
add more dates if needed to make it creamy
pulse the other 4 apples into small chunks in FP
add to apple/date sauce and mix together, coating apples evenly
pour apple mixture over strawberries
top apple filling with the rest of the crust
decorate with a few strawberry slices
place in the refrigerator for a few minutes to firm up
